The short answer: light roast whole beans taste best from around a week after roasting, and stay good for several weeks after that if the bag is kept sealed. Once you open the bag, try to finish it within a few weeks. Coffee does not spoil like fresh food, but it slowly loses the aromas that make a light roast special, and the florals go first.
From Roaster to Cup: What Happens Day by Day
| Time after roasting | What is happening | What to do |
|---|---|---|
| The first few days | The beans release a lot of carbon dioxide | Brewable, but the cup can taste muted or sharp. Let it rest if you can |
| After around a week | The gas has settled and the flavours open up | Our coffee tastes best from here |
| The weeks after | The best drinking window for most light roasts | Keep the bag sealed between brews |
| After opening | Oxygen slowly fades the aromatics | Aim to finish the bag within a few weeks |
Why Light Roast Needs to Rest
Roasting fills coffee beans with carbon dioxide. In the first days, so much gas escapes that it pushes water away from the grounds while you brew. You can see it as a big, bubbling bloom. The result is an uneven extraction, and the cup can taste flat, sharp or less sweet than it should.
Light roasts are denser than dark roasts, so the gas tends to escape more slowly, and they usually need a little longer to settle. That is why we recommend waiting around a week after the roast date on the bag before brewing. It is fine to brew earlier, but the florals open up more once the coffee has rested.
Does Coffee Go Off?
Not in the way milk or bread does. Roasted coffee does not become unsafe to drink, it goes stale. Oxygen, light, heat and moisture slowly break down the aromatic compounds. With a light roast like Gesha, the jasmine and fruit fade first, and an old bag ends up tasting flat, woody or papery.
How to Store Coffee Beans
- Keep them in the bag they came in. Our bags are resealable and protect the coffee from light. Press out the air and seal it after every brew.
- Room temperature, away from light, heat and moisture. A cupboard works well. Avoid the counter next to the stove or a sunny window.
- Buy whole beans and grind just before brewing. Ground coffee has far more surface exposed to the air, so it loses its aroma much faster than whole beans.
- Skip the fridge. It is humid, and coffee picks up moisture and smells from other food.
Can You Freeze Coffee Beans?
Do not put an opened bag in and out of the freezer, because condensation forms every time it warms up. If you have more coffee than you can drink in a few weeks, freeze it unopened or split into small, airtight portions. Take out one portion at a time, let it reach room temperature before you open it, and do not freeze it again.
For most people, the simpler option is to buy smaller amounts more often. That is what our coffee subscription is for: a fresh bag every 2, 3 or 4 weeks, roasted to order.
How to Tell If Your Coffee Is Stale
- There is little or no bloom when you pour the first water.
- The beans smell faint when you open the bag.
- The cup tastes flat, woody or papery, and the fruit and florals are gone.
Stale coffee is still safe to drink, it just does not taste like it should. If a fresh light roast tastes sharp, wait a few more days. If it tastes faint, check the roast date before you change your recipe.
How We Keep Our Coffee Fresh
We roast to order in small batches in Oslo and ship within 24 hours of roasting, so your coffee arrives at the start of its best window, not at the end of it. Every bag is 200 g, about 14 cups with our V60 recipe, which is easy to finish while the coffee is at its best.
Our current coffees: Yellow Gesha, Red Gesha and SL09 Inca, or all three in Tres Amigos de Cusco.
Frequently Asked Questions
How long does light roast coffee last?
Whole beans in a sealed bag stay good for several weeks after roasting. Once opened, try to finish the bag within a few weeks. The coffee is still safe after that, but the aromas fade.
How long should light roast coffee rest after roasting?
Around a week. Our coffee tastes best from around a week after the roast date. You can brew it earlier, but the flavours open up more once the coffee has rested.
Can I drink coffee right after it is roasted?
Yes, but very fresh coffee releases a lot of gas, which makes the extraction uneven. It tastes better after resting, and light roasts are best from around a week after roasting.
Should I keep coffee in the fridge?
No. The fridge is humid, and coffee picks up moisture and smells from other food. Store it sealed at room temperature, away from light and heat.
Can I freeze coffee beans?
Only unopened bags or small airtight portions. Let a portion reach room temperature before opening it, and never refreeze. Do not move an opened bag in and out of the freezer.
How long does ground coffee last?
Much shorter than whole beans, because more of the coffee is exposed to air. For the best cup, grind just before you brew.
